I know to many when the subject of Indian spices comes up in a conversation a number of thoughts may arise. This can range from a complete avoidance for multiple reasons to loving it them but not truly knowing how to apply them.

Indian cuisine for many may seem like a daunting mission but in reality it all is based of about 7 basic spices which you can't go wrong, like cumin, coriander, mustard seed, turmeric, cinnamon, cardamon and Cayenne pepper.

These spices poses medicinal properties, flavors  and food preserving capabilities. Some may have from sweet, fragrant cardamom to one of the most   spiciest chilli pepper, from smoky cumin to pungent mustard seeds, bold, aromatic spices add character and a richness to Indian dishes.

For me it's a love I have for the spices, hence the main product of import which I deal with. I guess i can say that in a way spices take me back to my my childhood, when my mum would prepare many Indian dishes for family gatherings. 

Although  there are numerous spices to choose from, you can bring a taste of India to your table by experimenting with a few basic ones. The key to these spices is to understand how does each spice affects your dishes. It's chemistry in the kitchen

Mum  would always heat that pan with no oil and like an artist adding colors to a canvas she would pour a number of spices mixing  them slowly to get that smoky roasted fragrance.

It's good to plan ahead and think of what foods you will prepare to pair with the right spices. So before deciding what foods to pair the spices with, it’s important to learn the best way to cook with them. Some tips, like knowing that spices are friends with coconut milk and oil. This helps the spice release its essence. Flavors marry, distribute and intensify a dishes flavor.
